About the role:

As the Brewer/Cellar person, you will work in all areas of brewery production with our brew and cellar team, with a focus on wort production, cellaring and de-alcoholisation of beer. You will report directly to the Production Manager.

Operation and upkeep of equipment, and maintaining quality control throughout all aspects of the brewing role will be a focus for this position. Brewers will receive and process raw materials, packaging materials, and chemicals.

Training will be given as required. All employees are expected to abide by the HACCP prerequisites and Company Policies. 

Responsibilities include (but are not limited to):

  • Wort production - 3 brews per day
  • Tank CIP’s
  • Maintaining and fulfilling Total Quality Management System
  • Steam boiler - daily check and weekly responsibilities
  • Cellar duties inc. samples, cropping, hopping, sign-offs, caustic titration, Co2 recovery checks
  • Running the de-alcoholisation machine
  • Quality control - ambient and forced-aged testing
  • Leading weekly tasting panels
  • Attendance and involvement at daily brewing team meetings at the start of each day and weekly team meetings. The daily meetings will help define your responsibilities and work priorities for each day and the week.
  • Contributing to and abiding by a HACCP system to maintain standards of Food Safety, Food Quality, and Personal Safety. Brewers are required to participate in HACCP team meetings
  • Following and maintaining the use of standard operating procedures - unless otherwise instructed - to meet quality specifications and ensure proper brewhouse/cellar/packaging operations
  • Attending beer development meetings for recipe creations and beer improvement
  • Contributing to and abiding by a Quality Management system, whereby all beers are tested against various specifications throughout production
  • Operation, cleaning and maintenance of equipment in a safe and efficient manner
  • Maintaining the cleanliness of all areas of the brewery
  • Completing all necessary paperwork accurately and on time
  • Contributing to and abiding by a Stock Control system

  • Able to work effectively on your own and as part of the team, to ensure the beer journey runs smoothly.
  • Ability to problem solve collaboratively with the brew team.
  • Excellent timekeeping skills and reliability
  • Professional with adherence to food hygiene, health and safety.
  • Great attention to detail, specifically with beer quality.
  • Organised and efficient
  • Appreciative of the importance of thorough cleaning
  • Being able to adapt to changes in brew schedule that could impact the day-to-day duties.
  • Passionate about beer, food and flavours
  • IBD General Certificate level or equivalent
  • A basic understanding of using word processing, spreadsheets and particular programmes for brewery functions. Specific training will be given for brewery software.
  • Ideally, you have previously worked in a similar or related field

Skills and Qualifications - These are desired but not essential.

Key details:

Location: Old Market, Bristol

Hours: 40 hours per week on rotating shifts timetable Monday to Thursday with an additional rotating weekend shift of 2 hours on a Friday and Saturday each month. Hours may vary with production demands.

Salary: Range £26,000 to £31,000 per annum depending on experience
